Directions: In a small bowl, stir the ricotta, vanilla extract and cinnamon until well combined. To serve: Take 2 tall glasses (parfait, wine or whatever you may have) and layer ingredients. Place some raspberries and pear chunks in the bottom of the glasses, then some ricotta mixture, then some of the broken graham crackers. Keep layering in this manner until ingredients are all used. Top each parfait with the sliced almonds and enjoy.
